On Anthology of Word Sommelier
The word sommelier merges the following original meanings:
Somme/sommier, in provence dialect pronounced as "saumalier". The somme/sommier was responsible for the animal team – the only way to transport wine then.
Sommé (meaning charged) was a word for a person taking care of tableware, bread and wine.
The word sommelier as well as a name for proper job was established in the beginning of the 19th century. The main reason was fast development of bigger hotels and exclusive resturants.
